Cooking Rice

    Rinse the Rice

    In a fine mesh strainer, rinse the long-grain white rice under cold water until the water runs clear. This helps remove excess starch.

    Cook the Rice

    In a medium saucepan, combine the rinsed rice, water, olive oil, salt, ground cumin, and garlic powder. Bring to a boil over medium-high heat.

    Simmer and Fluff

    Once boiling, reduce the heat to low, cover the saucepan, and simmer for about 18 minutes, or until the rice is tender and the water has been absorbed. Remove from heat and let it sit for 5 minutes before fluffing with a fork.

Cooking Beans

    Prepare the Ingredients

    While the rice is cooking, finely chop the onion and mince the garlic cloves.

    Sauté Onion and Garlic

    In a medium saucepan, heat a drizzle of olive oil over medium heat. Add the chopped onion and sauté until it becomes translucent, about 3-4 minutes. Add the minced garlic and cook for another 1 minute.

    Add Black Beans

    Drain and rinse the canned black beans, then add them to the saucepan with the sautéed onion and garlic. Stir in the cumin, lime juice, salt, and black pepper.

    Simmer the Beans

    Bring the mixture to a simmer and cook for about 5-10 minutes, allowing the flavors to meld. Stir occasionally.

    Add Cilantro

    Just before serving, stir in the chopped cilantro into the bean mixture.

Serving

    Plate the Dish

    Serve the seasoned rice alongside the stewed black beans. Optionally, garnish with additional cilantro and lime wedges.
