Preparing the Yucca Fries

Peel and Cut Yucca
Start by peeling the yucca roots to remove the tough outer skin. Cut the peeled yucca into fry-shaped pieces, about 1/2 inch thick.

Boil the Yucca
In a large pot, bring salted water to a boil. Add the yucca fries and cook for about 20 minutes or until they are tender but not falling apart. Drain and allow to cool slightly.

Heat Oil for Frying
In a deep skillet or fryer, heat the vegetable oil over medium heat until it reaches 350°F (175°C).

Fry the Yucca
Carefully add the boiled yucca fries to the hot oil in batches, frying until they are golden brown and crispy, approximately 5-7 minutes. Remove with a slotted spoon and drain on paper towels. Season with salt.

In a small saucepan, add the garlic cloves and cover them with olive oil. Ensure the cloves are submerged.

In a large bowl, toss the fried yucca fries with the garlic confit, using both the garlic and the infused oil to coat the fries evenly.

Sprinkle the grated parmesan cheese and chopped parsley over the garlic-coated yucca fries, tossing gently to combine.
