Prepare the Vegetables

    Roast the Vegetables

    Preheat the oven to 400°F (200°C). Chop the carrots, zucchini, squash, eggplant, and red bell pepper into small, even-sized pieces. Place them on a baking sheet, drizzle with olive oil, and season with salt and pepper. Roast for 25-30 minutes or until tender.

    Cook the Green Vegetables

    In a pot of boiling water, blanch the green beans, broccoli, cauliflower, peas, and lima beans for about 3-4 minutes. Drain and set aside.

    Sauté the Onions and Spinach

    In a skillet, heat 1 tablespoon of olive oil over medium heat. Add diced onions and sauté until translucent (about 5 minutes). Add spinach and cook until wilted (about 2 minutes).

Make the Ravioli

    Combine Filling

    In a large bowl, combine the roasted vegetables, sautéed onions and spinach, and all the blanched vegetables. Mix well and add panko breadcrumbs for texture.

    Prepare Ravioli Dough

    Roll out your favorite vegan pasta dough to about 1/16 inch thick. Cut into squares about 3 inches in size.

    Fill the Ravioli

    Place a spoonful of the vegetable filling in the center of each square. Moisten the edges with water, fold over to create a triangle, and press to seal. Ensure there are no air pockets.

Prepare Marinara Sauce

    Cook the Marinara Sauce

    In a saucepan, heat 1 tablespoon of olive oil over medium heat. Add minced garlic and sauté for 1 minute. Add canned tomatoes, oregano, basil, salt, and black pepper. Simmer for 20 minutes.

Cook the Ravioli

    Boil the Ravioli

    Bring a large pot of salted water to a boil. Carefully add the ravioli and cook for 3-4 minutes or until they float to the surface. Remove with a slotted spoon.

Serve

    Plate the Dish

    Serve the cooked ravioli topped with marinara sauce. Garnish with additional panko breadcrumbs if desired.
