Preparation of Pikliz

    Make the Pikliz

    In a bowl, mix shredded cabbage, grated carrot, and whole scotch bonnet pepper. Add salt and vinegar, then stir well. Store in the refrigerator for at least 1 hour to allow the flavors to meld.

Cooking Sauce and Pasta

    Prepare the Sauce

    In a large saucepan, heat olive oil over medium heat. Add chopped onion and minced garlic, sauté until translucent. Then, add diced bell pepper and carrot, cooking for another 5 minutes.

    Add Tomatoes and Seasonings

    Pour in the canned crushed tomatoes and add salt, black pepper, bay leaf, and fresh thyme. Stir well, then let the sauce simmer on low heat for 20 minutes, stirring occasionally.

    Cook the Pasta

    While the sauce is simmering, bring a large pot of salted water to a boil. Add pasta and cook according to package instructions until al dente. Drain and set aside.

    Cook the Sausage

    In a separate pan, cook the beef-pork sausage over medium heat until browned and cooked through. Slice into rounds.

Combining and Serving

    Combine Ingredients

    Add the cooked pasta and sausage to the tomato sauce. Stir to combine and heat through for an additional 5 minutes on low heat.

    Garnish and Serve

    Serve the Kreyol Pasta hot, garnished with slices of hard-boiled eggs and a generous spoonful of Pikliz on the side.
