Method
Prepare the Salad Base

Wash and Chop Kale
Rinse 4 cups of kale thoroughly under cold water. Remove the tough stems and tear the leaves into bite-sized pieces.

Prepare Romaine Lettuce
Wash and chop 2 cups of romaine lettuce into bite-sized pieces, similar in size to the kale.

Slice Red Onion
Finely slice 0.5 cups of red onion and set aside.
Make Croutons

Prepare the Bread
Preheat the oven to 375°F (190°C). Cut 4 slices of bread into small cubes.

Mix with Olive Oil and Seasonings
In a mixing bowl, combine the bread cubes with 2 tablespoons of olive oil, minced garlic (2 cloves), salt, and pepper to taste. Toss until the bread is evenly coated.

Bake Croutons
Spread the bread cubes on a baking sheet in a single layer. Bake for 10-12 minutes or until golden brown and crispy, stirring halfway through.
Prepare Parmesan Crisp

Make the Parmesan Crisp
On a parchment-lined baking sheet, place small mounds of 1 cup grated Parmesan cheese, spaced apart. Bake at 375°F (190°C) for 5-7 minutes or until melted and golden. Let cool before removing.
Assemble the Salad

Combine Ingredients
In a large salad bowl, combine the prepared kale, romaine lettuce, and red onion.

Add Dressing
Drizzle 0.5 cups of lime Caesar dressing over the salad and toss gently to combine.

Top with Croutons and Parmesan Crisp
Add the baked croutons on top of the salad and finish with the Parmesan crisps for garnish.
