Burger Preparation

Mix the Meat
In a large bowl, combine the ground chuck, short rib, and brisket. Season with salt and black pepper. Mix gently until just combined.

Form Patties
Divide the mixture into two equal portions and shape them into patties, making a slight indentation in the center of each.

Cook the Bacon
In a skillet over medium heat, cook the bacon slices until crispy. Remove and drain on paper towels.

Add Cheese
During the last minute of cooking, place blue cheese on top of each patty and cover until melted.
Assembling the Burger

Toast the Buns
Lightly toast the brioche buns on the grill or in a toaster.

On the bottom half of each bun, layer lettuce, the burger patty with melted blue cheese, crispy bacon, a slice of tomato, and a spoonful of apple chutney. Top with the other half of the bun.
Preparing Sweet Potato Fries

Cut Sweet Potatoes
Peel and cut the sweet potatoes into fries or wedges.

In a large bowl, toss the sweet potato fries with olive oil, salt, and paprika until evenly coated.

Spread the fries on a baking sheet in a single layer. Bake at 425°F (220°C) for 20-25 minutes, flipping halfway through, until crispy.
