Burger Patty Preparation

    Combine Meats

    In a large mixing bowl, combine the ground chuck, short rib, and brisket. Mix well until all meats are evenly combined.

    Season the Mixture

    Add salt and black pepper to the meat mixture. Gently mix the seasoning into the meat without overworking it.

    Form Patties

    Divide the mixture into two equal portions and shape them into burger patties, about 1 inch thick.

Cooking the Burger

    Cook Bacon

    In a skillet over medium heat, cook the bacon slices until crispy. Remove and place on paper towels to drain excess fat.

    Grill the Patties

    In the same skillet or on a grill, cook the burger patties over medium-high heat for about 4-5 minutes per side for medium doneness.

    Add Blue Cheese

    During the last minute of cooking, place blue cheese on top of each patty to let it melt slightly.

Assembling the Burger

    Prepare the Buns

    Toast the brioche buns lightly on the grill or in a toaster until golden brown.

    On the bottom half of each bun, place a lettuce leaf, followed by the cooked burger patty with melted blue cheese, a slice of tomato, and two slices of crispy bacon. Top it with a tablespoon of apple chutney and cover with the top half of the bun.

Preparing Sweet Potato Fries

    Slice Sweet Potatoes

    Peel and cut the sweet potatoes into thin fries, about 1/4 inch thick.

    In a large bowl, toss the sweet potato fries with olive oil, salt, paprika, and black pepper until evenly coated.

    Bake Fries

    Spread the fries in a single layer on a baking sheet and bake at 425°F (220°C) for about 25-30 minutes, flipping halfway through until crispy.
