    Wash the Russet potatoes thoroughly under cold water to remove any dirt. Cut each potato lengthwise into 1/4 inch thick slices, and then cut those slices into 1/4 inch thick fries. You should have about 4 cups of fries.

    In a large, heavy-bottomed pot or deep fryer, pour in the vegetable oil. Heat the oil over medium-high heat until it reaches 350°F (175°C). Use a thermometer for accuracy.

    Frying the Fries

    Once the oil is hot, carefully add a handful of cut fries into the oil, being cautious not to overcrowd the pot. Fry the fries for about 4-5 minutes or until they turn golden brown. Remove with a slotted spoon and place them on paper towels to drain excess oil.
