Mussels

Method

Preparation of Mussels

  1. 1

    Clean the Mussels

Rinse the mussels under cold water. Scrub the shells with a brush to remove any debris. Remove any beards (the fibrous strands) attached to the shells.

  2. 2

    Check for Freshness

Discard any mussels that are open and do not close when tapped. They should smell like the sea, not fishy.

Cooking the Sauce

  1. 3

    Sauté Shallots and Garlic

In a large pot, melt the butter over medium heat. Add the finely chopped shallots and sauté until soft and translucent, about 3-4 minutes. Add the minced garlic and cook for an additional 1-2 minutes until fragrant.

  2. 4

    Add Wine

Pour in the dry white wine, scraping the bottom of the pot to deglaze, and bring to a simmer. Allow the wine to reduce for about 5 minutes.

  3. 5

    Incorporate Cream and Lemon

Stir in the heavy cream and lemon juice. Cook for another 2-3 minutes until the sauce thickens slightly.

  4. 6

    Season the Sauce

Add the chopped parsley, thyme, salt, and black pepper to the sauce. Mix well and adjust seasoning to taste.

Cooking the Mussels

  1. 7

    Add Mussels

Carefully add the cleaned mussels to the pot with the sauce. Cover the pot with a lid and allow the mussels to steam for about 5-7 minutes, or until they have opened up.

  2. 8

    Serve

Once cooked, discard any mussels that remain closed. Serve the mussels in bowls with the rich sauce poured over them. Garnish with extra fresh herbs if desired.
