Preparation of Mussels

Clean the Mussels
Rinse the mussels under cold water. Scrub the shells with a brush to remove any debris. Remove any beards (the fibrous strands) attached to the shells.

Check for Freshness
Discard any mussels that are open and do not close when tapped. They should smell like the sea, not fishy.
Cooking the Sauce

Add Wine
Pour in the dry white wine, scraping the bottom of the pot to deglaze, and bring to a simmer. Allow the wine to reduce for about 5 minutes.

Incorporate Cream and Lemon
Stir in the heavy cream and lemon juice. Cook for another 2-3 minutes until the sauce thickens slightly.

Season the Sauce
Add the chopped parsley, thyme, salt, and black pepper to the sauce. Mix well and adjust seasoning to taste.

Serve
Once cooked, discard any mussels that remain closed. Serve the mussels in bowls with the rich sauce poured over them. Garnish with extra fresh herbs if desired.
