Waffle Preparation

    Mix Dry Ingredients

    In a large bowl, whisk together the all-purpose flour, baking powder, cinnamon, salt, and coconut sugar until well combined.

    Combine Wet Ingredients

    In another bowl, beat the eggs and then add the milk, vanilla extract, and melted coconut oil. Mix until smooth.

    Combine Wet and Dry Mixes

    Pour the wet ingredients into the dry ingredients. Stir until just combined; do not overmix. The batter should be slightly lumpy.

    Preheat and Cook Waffles

    Preheat your waffle iron according to the manufacturer's instructions. Lightly grease it with cooking spray or coconut oil. Pour an appropriate amount of batter onto the waffle iron and cook until golden brown and crisp, about 4-5 minutes. Repeat with remaining batter.

Assembly

    In a small bowl, combine 2 tablespoons of coconut sugar with 1 teaspoon of cinnamon.
