Marinating the Shrimp

Prepare the Shrimp
In a large bowl, combine the large shrimp, curry powder, lime juice, olive oil, salt, and black pepper. Toss well to ensure the shrimp are evenly coated with the marinade.

Marinate
Cover the bowl with plastic wrap and let the shrimp marinate in the refrigerator for at least 30 minutes to enhance the flavors.
Cooking the Vegetables

Sauté the Vegetables
In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the sliced bell peppers and onion. Sauté for about 5-7 minutes until the vegetables are tender but still crisp.

Add Roasted Red Peppers
Add the sliced roasted red peppers and cook for an additional 2 minutes to warm through. Remove the skillet from heat and set aside.

Cook the Shrimp
In the same skillet, increase the heat to medium-high. Add the marinated shrimp and cook for about 3-4 minutes, turning occasionally, until the shrimp are pink and cooked through.
Assembling the Tacos

Warm the Tortillas
In a separate skillet, warm the tortillas over medium heat for about 30 seconds on each side until pliable.

Assemble Tacos
On each tortilla, layer the sautéed vegetables, followed by the cooked shrimp. Top with chopped scallions and fresh cilantro. Serve with lime wedges on the side.
