Sear the Ribs
In a large Dutch oven, heat olive oil over medium-high heat. Season the short ribs with salt and black pepper. Sear the short ribs on all sides until browned, about 3-4 minutes per side. Remove the ribs and set aside.

Add Broth and Herbs
Return the short ribs to the pot and add beef broth, fresh thyme, and bay leaves. Bring to a boil, then reduce the heat to low and cover. Simmer for 2-3 hours, or until the meat is tender and falling off the bone.

Cook the Gnocchi
In a large pot of salted boiling water, add the potato gnocchi. Cook according to package instructions until they float to the surface, about 2-3 minutes. Drain and set aside.
Creamy Parmesan Sauce

Make the Sauce
In the same pot with the strained sauce, add heavy cream, garlic powder, salt, and black pepper. Bring to a simmer over medium heat, stirring frequently.

Add Parmesan
Once the sauce has thickened slightly, stir in the grated Parmesan cheese until melted and smooth.

Combine Everything
Shred the short ribs and add them back into the sauce. Add the cooked gnocchi and stir gently to combine, heating through for an additional 2-3 minutes.
