Method

Prepare the Salmon

    Season the Salmon

    Pat the salmon fillets dry with paper towels. Rub both sides of each fillet with olive oil and generously coat with blackening spice.

    Cook the Salmon

    Heat a skillet over medium-high heat. Once hot, add the salmon fillets skin-side down. Cook for about 4-5 minutes until the skin is crispy, then flip and cook for an additional 3-4 minutes until cooked through and blackened. Remove from heat and let rest for a few minutes before flaking into large pieces.

Prepare the Chipotle Aioli

    Mix the Aioli

    In a small bowl, combine the mayonnaise, chopped chipotle peppers in adobo sauce, and lime juice. Stir well until smooth. Adjust the seasoning with more lime juice if desired.

Assemble the Tacos

    Prepare the Tortillas

    Warm the corn tortillas in a dry skillet over medium heat for about 30 seconds on each side until pliable.

    Build the Tacos

    On each tortilla, layer some Boston Bibb lettuce, a few pieces of the blackened salmon, sliced banana peppers, and a sprinkle of crispy wontons. Drizzle with chipotle aioli.

    Serve the assembled tacos immediately, garnished with extra chipotle aioli and lime wedges if desired.
