Cut the Potatoes
Wash the Russet potatoes thoroughly and cut them into waffle fry shapes using a waffle fry cutter or a knife. Aim for uniform thickness to ensure even cooking.

Dry the Potatoes
After soaking, drain the water and spread the potatoes out on a clean kitchen towel. Pat them dry thoroughly to remove any excess moisture.
Frying the Waffle Fries

Heat the Oil
In a deep pot or fryer, heat the vegetable oil to 350°F (175°C). Use a thermometer for accuracy to ensure perfect frying.

Fry the Waffle Fries
Carefully add a handful of the dried waffle fries into the hot oil. Do not overcrowd the pot. Fry for about 4-5 minutes until they are golden brown and crispy.

Drain and Season
Using a slotted spoon, remove the fries from the oil and place them on a plate lined with paper towels to drain excess oil. While they are still hot, sprinkle with salt, paprika, garlic powder, and black pepper to taste.

In a small bowl, mix together the mayonnaise, ketchup, hot sauce, and lemon juice until well combined. Adjust the hot sauce based on your spice preference.
