Onion Rings

Prepare the Onions
Peel the sweet white onions and slice them into 1/2-inch thick rings. Separate the rings and set them aside.

Make the Batter
In a large mixing bowl, combine the all-purpose flour, cornstarch, baking powder, garlic powder, onion powder, paprika, salt, and black pepper. Gradually whisk in the cold sparkling water until the batter is smooth and slightly thick.

Heat the Oil
In a large, deep saucepan or fryer, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

Coat the Onion Rings
Dip each onion ring into the batter, allowing any excess to drip off.

Fry the Onion Rings
Carefully place the coated onion rings into the hot oil in batches. Fry for 3-4 minutes or until golden brown and crispy. Remove with a slotted spoon and drain on paper towels.

In a bowl, combine the mayonnaise, sour cream, dried dill, garlic powder, onion powder, salt, black pepper, and lemon juice. Whisk until smooth.

In a small bowl, mix the ketchup, mayonnaise, hot sauce, and honey until well combined.
