Brewing Process

    Mashing

    In a large brew kettle, heat 5 gallons of water to approximately 165°F (74°C). Add 10 cups of pale malt, 1 cup of crystal malt, and 1 cup of flaked corn. Stir well and maintain the temperature for 60 minutes.

    Sparging

    After mashing, sparge with additional hot water to rinse sugars from the grains until you collect about 6 gallons of wort in your brew kettle.

    Boiling

    Bring the wort to a boil. Once boiling, add 1 oz of bittering hops and boil for 60 minutes. In the last 5 minutes of the boil, add 0.5 oz of aroma hops.

    Cooling

    Cool the wort quickly using a wort chiller or an ice bath until it reaches about 70°F (21°C).

    Fermentation

    Transfer the cooled wort to a sanitized fermentation vessel. Add the yeast and seal the vessel. Allow it to ferment for 1-2 weeks at a consistent temperature around 68°F (20°C).

Flavoring Process

    Adding Flavor

    After fermentation is complete, gently stir in 2 tsp of vanilla extract, 1 cup of lactose, and 0.5 cup of cocoa powder into the fermented beer. Mix well until fully dissolved.

    Conditioning

    Bottle the beer in sanitized bottles, ensuring to add priming sugar if desired for carbonation. Seal and let them condition for 2 weeks at room temperature.
