Preparation of Potatoes

    Cube the Potatoes

    Peel and cube the potatoes into bite-sized pieces. Rinse them under cold water to remove excess starch.

    Boil the Potatoes

    In a large pot, fill with water and add 1 tsp of salt. Bring to a boil, then add the cubed potatoes. Boil for about 10-12 minutes until they are tender but not falling apart. Drain and set aside to cool.

    Season the Potatoes

    Once the potatoes have cooled, sprinkle 2 tbsp of Cajun seasoning over them and toss gently to coat evenly.

Making Cajun Mayo

    Combine Ingredients

    In a mixing bowl, combine 1 cup of mayonnaise, 1 tbsp of Cajun seasoning, 1 tbsp of lemon juice, and 1 tsp of garlic powder.

    Mix Well

    Stir the mixture thoroughly until all ingredients are well combined. Refrigerate until ready to use.

Frying Potatoes

    Heat the Oil

    In a deep frying pan, heat 4 cups of vegetable oil over medium-high heat until it reaches 350°F (175°C).

    Fry the Potatoes

    Carefully add the seasoned potatoes in batches to avoid overcrowding. Fry until golden brown and crispy, about 4-5 minutes per batch. Use a slotted spoon to remove the potatoes and place them on paper towels to drain excess oil.

    Toss with Cajun Mayo

    In a large bowl, combine the fried potatoes with the prepared Cajun mayo. Toss gently until the potatoes are well coated.
