Calamari and Sweet Chili Sauce
Method
Preparation and Cooking
Prepare the Calamari
In a large bowl, combine the all-purpose flour, cornstarch, salt, and black pepper. Mix well.
Coat the Calamari
Dredge the cleaned calamari rings in the flour mixture until fully coated. Shake off any excess flour.
Heat the Oil
In a deep frying pan or pot, heat the oil over medium-high heat until it reaches 350°F (175°C).
Fry the Calamari
Fry the coated calamari rings in batches for about 2-3 minutes or until they are golden brown and crispy. Avoid overcrowding the pan.
Drain and Serve
Remove the fried calamari and place them on a plate lined with paper towels to drain excess oil. Serve hot with sweet chili sauce, garnished with fresh cilantro and lime wedges.
