Prepare the Chorizo

Cook the Chorizo
In a skillet over medium heat, add 1 tablespoon of olive oil. Once hot, add the spicy chorizo sausage. Cook, breaking it apart with a spatula, until browned and cooked through, about 5-7 minutes. Drain any excess fat and set aside.
Make the Cheese Dip

Combine Ingredients
In a medium saucepan over low heat, combine the cream cheese, shredded cheddar cheese, diced tomatoes with green chilies, and milk. Stir continuously until the mixture is melted and smooth.

Add Spices
Once the cheese is melted, stir in the garlic powder, onion powder, cumin, salt, and black pepper. Adjust seasoning to taste.

Mix in Chorizo
Add the cooked chorizo to the cheese mixture and stir until evenly combined. Continue heating on low until warmed through.
Serve

Serve with Chips
Transfer the queso dip to a serving bowl and serve warm with tortilla chips on the side.
