Prepare Pistachio Simple Syrup
In a saucepan, combine equal parts sugar and water with shelled pistachios. Bring to a simmer, stirring until the sugar dissolves. Let it cool and strain out the pistachios. Store in a bottle.

Combine Ingredients
In a cocktail shaker filled with ice, add 2 oz of Spotted Bear Vodka, 4 oz of Spotted Bear Coffee Cold Brew, and 1 oz of Pistachio Simple Syrup.

Shake
Shake the mixture vigorously for about 15 seconds until well chilled.

Strain and Serve
Strain the mixture into a chilled cocktail glass.

Add Chocolate Shavings
Top the drink with 2 tablespoons of chocolate shavings for garnish.
