Prepare the Potatoes
Wash and peel the russet potatoes. Cut them into thin strips, about 1/4 inch thick.

Soak the Potatoes
Soak the cut potatoes in cold water for at least 30 minutes to remove excess starch.

Dry the Potatoes
Drain the potatoes and pat them dry with paper towels.

Second Fry
Increase the oil temperature to 375°F (190°C). Fry the potatoes again in batches for about 3-4 minutes or until golden brown and crispy. Drain on paper towels.

Season the Fries
Drizzle the fries with truffle oil and sprinkle with grated Parmesan cheese, salt, and pepper. Toss gently to combine.
Bacon Aioli

Cook the Bacon
In a skillet, cook the bacon slices over medium heat until crispy. Remove and crumble into small pieces.

Make the Aioli
In a bowl, mix mayonnaise, minced garlic, lemon juice, and crumbled bacon until well combined. Set aside.
Honey Mustard

Combine Ingredients
In a small bowl, whisk together honey, Dijon mustard, and mayonnaise until smooth. Set aside.
Chipotle Ketchup

Prepare the Fry Sauce
In a bowl, mix ketchup and mayonnaise together until smooth. Set aside.
BBQ Sauce

Serve BBQ Sauce
Place BBQ sauce in a serving bowl for dipping.
Garlic Aioli

Make Garlic Aioli
In a bowl, mix mayonnaise, minced garlic, and lemon juice until well combined. Set aside.
Spicy Bacon Jam

Make the Jam
Add brown sugar, hot sauce, and apple cider vinegar to the skillet. Stir to combine and let simmer for about 10 minutes until thickened.

Combine with Bacon
Chop the cooked bacon and stir it back into the jam mixture. Set aside to cool.
Ranch

Serve Ranch Dressing
Place ranch dressing in a serving bowl for dipping.
