Method
Chicken Piccata
- 1
Prepare the Chicken
Pound the chicken breasts to an even thickness of about 1/2 inch. Season both sides with salt and black pepper.
- 2
Dredge the Chicken
Place the flour in a shallow dish. Dredge each chicken breast in flour, shaking off the excess.
- 3
Fry the Chicken
In a large skillet, heat olive oil over medium-high heat. Add the chicken breasts and cook for about 4-5 minutes on each side until golden brown and cooked through. Transfer to a plate and keep warm.
- 4
Make the Sauce
In the same skillet, add butter and minced garlic. Sauté for about 1 minute until fragrant. Add chicken broth, lemon juice, and capers. Bring to a simmer and cook for 3-4 minutes until slightly reduced.
- 5
Finish the Chicken
Return the chicken to the skillet and spoon the sauce over it. Cook for an additional 2 minutes to heat through. Sprinkle with fresh parsley before serving.
