- 1
Muddle
In a mixing glass or shaker, add the fresh mint leaves and cane sugar syrup. Gently muddle the mint just enough to bruise the leaves and release aroma — do not pulverize. This brings out mint oils without bitterness.
- 2
Combine
Add the añejo rum, fresh lime juice, passion fruit puree, fresh orange juice, falernum, and Angostura bitters into the shaker with the muddled mint.
- 3
Shake
Add the ice cubes to the shaker, secure the lid, and shake vigorously for 12–15 seconds until the shaker is well chilled and slightly frosted.
- 4
Prepare glass
Fill a double-old fashioned glass or highball with crushed ice to the top.
- 5
Strain
Double-strain the shaken mixture over the crushed ice into the prepared glass to remove mint bits and any pulp. Use a fine mesh strainer in addition to the shaker strainer for a smooth texture.
- 6
Finish
Give the top of the drink a gentle tap to settle the crushed ice. Garnish with a dehydrated lime wheel or a lime wedge on the rim and lightly slap a small mint sprig across the top for aroma.
- 7
Serve
Serve immediately with a short straw so the drinker can enjoy the aroma and crushed-ice texture together.
