Cocktail

Honey Syrup (make ahead)

Method

Honey Syrup (make ahead)

  1. 1

Combine equal parts honey and hot water in a heatproof container. Stir until honey fully dissolves. Let cool to room temperature, then transfer to a sealed container and refrigerate. Keeps up to 2 weeks.

Cocktail Preparation

  1. 2

    Chill glass

Place your serving glass (rocks glass) in the freezer or fill with ice water to chill while you prepare the cocktail.

  2. 3

    Measure ingredients

Measure 1.5 oz añejo rum, 1.0 oz sweet vermouth, 0.5 oz fresh lime juice, 0.5 oz honey syrup, 0.25 oz Campari, and 2 dashes orange bitters into a mixing glass or cocktail shaker.

  3. 4

    Add ice and stir

Fill the mixing glass with ice (about 1 cup). Stir gently for 20–30 seconds until the mixture is well chilled and slightly diluted (mix reaches about 10–15% dilution).

  4. 5

    Prepare serving glass

Discard the chilling ice or remove the glass from the freezer. Place a large ice cube or sphere in the chilled rocks glass.

  5. 6

    Strain

Double-strain the stirred cocktail into the rocks glass over the large ice cube using a julep strainer and a fine mesh strainer (or just the julep strainer) to catch small shards.

  6. 7

    Garnish

Express the oils of an orange twist over the drink by holding the twist skin-side down and giving it a quick pinch over the surface. Run the twist around the rim, then discard or drop it into the glass. Add a brandied or Luxardo cherry on a pick.

  7. 8

    Serve

Serve immediately. Sip slowly — this is a balanced, spirit-forward sipper with sweet, bitter and bright citrus notes inspired by the Romeo & Juliet name.
