    Preheat and prepare dough

    Preheat oven to 500°F (260°C). If using a pizza stone, place it in the oven while preheating. On a lightly floured surface, stretch or roll the pizza dough into a 12–14-inch round. Transfer to a piece of parchment paper or a pizza peel dusted with cornmeal. Brush the dough edge lightly with 1 tablespoon olive oil to help the crust brown.

    Sauce and cheese

    Evenly spread 3 tablespoons tomato pizza sauce over the dough, leaving a 1/2-inch border for the crust. Sprinkle 1 1/2 cups of the shredded mozzarella evenly over the sauced dough, reserving the remaining 1/2 cup for after the pineapple/ham step.

    Sauté pineapple

    Heat a 10-inch skillet over medium heat. Add 1 tablespoon unsalted butter. When melted and foaming, add 1 cup diced pineapple, 1 teaspoon brown sugar, and 1 teaspoon soy sauce (if using). Cook, stirring occasionally, for 4–5 minutes until the pineapple is caramelized at the edges and most of the liquid has evaporated. Stir in 1 teaspoon black pepper and 1/4 teaspoon red pepper flakes (if using). Remove from heat and let cool slightly for 2 minutes.

    Assemble toppings

    Distribute the 8 ounces of cooked ham evenly over the cheese on the pizza. Spoon the sautéed pineapple pieces across the pizza in an even layer. Sprinkle the remaining 1/2 cup shredded mozzarella over the top to help the toppings meld during baking.

    Bake

    Slide the pizza (on the parchment or peel) onto the preheated stone or baking sheet. Bake at 500°F (260°C) for 8–12 minutes, rotating once after 5–6 minutes, until the crust is golden and cheese is bubbly and beginning to brown.

    Finish and serve

    Remove the pizza from the oven and let rest for 2 minutes. Sprinkle with 2 tablespoons chopped fresh basil or parsley and 2 tablespoons grated Parmesan if desired. Slice into 6–8 slices and serve hot.
