Cook aromatics
Heat 1 tablespoon oil in a medium skillet over medium heat. Add the finely diced Spanish onion and sauté for 4–5 minutes until soft and translucent. Add the minced garlic and cook 30 seconds until fragrant.

Brown sausage
Add the crumbled Colombian pork sausage to the skillet. Break it up with a spatula and cook 6–8 minutes until browned and cooked through. Stir occasionally so it browns evenly.

Season and finish
Stir in ground cumin, black pepper, and 1/4 teaspoon salt. Cook 1 minute to bloom the spices. Remove from heat and stir in chopped cilantro or scallions. Transfer the sausage mixture to a bowl and keep warm.

Beat eggs
In a bowl whisk together 6 large eggs, 2 tablespoons milk or cream, 1/4 teaspoon salt, and 1/4 teaspoon black pepper until just combined and slightly frothy.

Cook scrambled eggs
Heat a nonstick skillet over medium-low, add 1 teaspoon oil or butter. Pour in the egg mixture and let sit briefly until edges begin to set. Gently stir with a spatula, folding the eggs every 15–20 seconds, cooking to soft, slightly creamy curds (about 3–5 minutes). Remove from heat just before fully set; residual heat will finish them.

Warm arepas
Heat a clean skillet or griddle over medium heat. Add 1/2 tablespoon butter and place arepas cut-side up (if they are pre-split) or whole on the griddle. Cook 3–4 minutes per side until warmed through and lightly crisped. If using whole arepas, slice open carefully after warming to create a pocket.
