Thinly slice the onion and red bell pepper into even 1/8-inch strips so they cook evenly.

Split the hoagie rolls and set aside. Preheat a large skillet or cast-iron pan over medium-high heat.
Cook Vegetables

Sauté onions & peppers
Add 1 tablespoon vegetable oil and 1 tablespoon butter to the preheated skillet. When butter is melted and foamy, add the sliced onions and red peppers. Season lightly with a pinch of salt and pepper. Cook, stirring occasionally, until softened and beginning to caramelize, about 8–10 minutes. Remove vegetables to a bowl and set aside.

Sear steak strips
Return the skillet to medium-high heat and add a small drizzle of oil if dry. Add the steak in a single layer (work in batches if needed) and sear without overcrowding for 1–2 minutes per side, stirring and breaking apart slightly with a spatula until just browned. Avoid overcooking; thin strips cook quickly.

Assemble & Melt Cheese

Cover the skillet with a lid for 1–2 minutes or until the cheese melts. Alternatively, transfer meat and cheese to a baking sheet and broil 1–2 minutes until cheese is melted and just bubbling—watch carefully to prevent burning.
Toast Rolls & Serve

While cheese is melting, brush hoagie roll interiors lightly with 1 tablespoon olive oil (or butter) and toast cut side down in a separate skillet or under the broiler until golden, about 1–2 minutes.

Open toasted rolls and divide the cheesy steak mixture among them using a spatula. Sprinkle with chopped fresh parsley if desired and serve hot with extra hot sauce or ketchup on the side.
