Preparing the cheeses
Bring to room temperature
Remove all cheeses from refrigeration 30–60 minutes before serving. Bringing cheese to room temperature allows full flavor and aroma to develop. Keep the wrapped rinds lightly covered on the counter.
Portion and label
Slice or leave wedges as follows: cut the aged cheddar into 1/4-inch slices or an easy-to-grab chunk; cut the Manchego into thin fan slices or 1/2-inch wedges; leave the Brie whole with a small wedge cut to allow guests to spread; crumble or leave a wedge of the blue cheese; slice the goat cheese log into 1/2-inch rounds or keep whole with a spreading knife. Place small labels or write on a card to identify each cheese for your guests.
Preparing breads & crackers
Slice the baguette into 1/4-inch slices. If desired, lightly brush one side with olive oil and place on a baking sheet. Toast under a preheated 350°F (175°C) oven for 6–8 minutes until just crisp and lightly golden. Cool on a rack. Arrange assorted crackers in a separate section so textures are varied and accessible.
Preparing fruit, spreads & nuts
Rinse grapes and dry thoroughly. Quarter fresh figs if using and arrange next to soft cheeses. Thinly slice the apple immediately before serving and toss with a squeeze of lemon if you wish to prevent browning. Place honey in a small bowl or drizzle dish; warm the honey slightly (5–10 seconds in microwave) if you prefer it runnier.
Spoon fig jam or cut quince paste into thin shards for easy pairing. Place Marcona almonds in a small bowl and set near the crackers. Arrange cornichons in a tiny dish to keep brine from wetting the board.
Plating and assembly
Select a large wooden board, slate, or platter. Start by placing cheeses spaced apart to allow room for cutting. Put the Brie with its cut wedge so guests can spread. Place blue cheese with a small knife for crumbling. Position the goat cheese near the crackers and the Brie for spreading.
Fill the gaps between cheeses with clusters of grapes, fig pieces, apple slices, and crackers. Add small bowls of honey and fig jam/quince paste. Scatter Marcona almonds and tuck cornichons and rosemary or thyme sprigs around the board for aroma and visual interest.
If desired, drizzle a teaspoon of extra-virgin olive oil over the Manchego or blue cheese and finish with a few grinds of black pepper on soft cheeses. Provide at least one separate knife per cheese and small spoons for spreads.
Serving and storage
Serve the board within 1–2 hours of assembling at room temperature. Encourage guests to try contrasts of texture and flavor (e.g., blue cheese with honey and walnut or Manchego with quince paste). Leftover cheeses: rewrap each variety in wax or parchment paper and then loosely in foil or in an airtight container; refrigerate. Bring refrigerated cheese back to room temperature before serving again.
