    Preheat the oven to 425°F (220°C). Scrub the russet potatoes under cold running water to remove dirt, then pat them dry with a clean towel. Leave the skin on.

    Using a fork, poke the potatoes 6–8 times all over to allow steam to escape while baking. Rub each potato with the olive oil until evenly coated.

    Season

    Sprinkle the coarse salt and freshly ground black pepper evenly over the potatoes, rubbing lightly so the seasonings adhere to the skin.

    Bake

    Place the potatoes directly on the oven rack or on a baking sheet lined with parchment for easier cleanup. Bake at 425°F (220°C) for 45–60 minutes, depending on size — they are done when a small knife or skewer slides into the center with little resistance and the skins feel crisp.

    Remove potatoes from the oven and let rest 5 minutes. This helps the steam finish cooking the interior without making the skin soggy.

    Split and fluff

    Working on a cutting board or plate, make a lengthwise slit across the top of each potato and gently press the ends together to open the potato. Use a fork to fluff the interior flesh, creating a small well for toppings.

    Divide the unsalted butter among the potatoes so it melts into the hot flesh. Spoon sour cream on top if using.
