Preheat the oven to 425°F (220°C). Scrub the russet potatoes under cold running water to remove dirt, then pat them dry with a clean towel. Leave the skin on.

Sprinkle the coarse salt and freshly ground black pepper evenly over the potatoes, rubbing lightly so the seasonings adhere to the skin.

Place the potatoes directly on the oven rack or on a baking sheet lined with parchment for easier cleanup. Bake at 425°F (220°C) for 45–60 minutes, depending on size — they are done when a small knife or skewer slides into the center with little resistance and the skins feel crisp.

Working on a cutting board or plate, make a lengthwise slit across the top of each potato and gently press the ends together to open the potato. Use a fork to fluff the interior flesh, creating a small well for toppings.
