Aromatics & Seasoning
Method
Aromatics & Seasoning
- 1
Sauté aromatics
Heat 1 tablespoon extra-virgin olive oil in a medium skillet over medium heat. Add the finely diced onion and cook, stirring occasionally, until soft and translucent, about 4–5 minutes. Add the minced garlic and cook until fragrant, about 30 seconds. Stir in smoked paprika and red pepper flakes (if using) and cook 15–20 seconds to bloom the spices.

Combine and simmer
Add the drained and rinsed beans to the skillet with the aromatics and stir to coat. Pour in 1 cup broth, 1 tablespoon olive oil, and 1 tablespoon butter. Gently stir and bring to a low simmer. Cook, uncovered, for about 6–8 minutes, stirring occasionally, until the liquid reduces slightly and the beans are heated through.
- 3
Mash for texture (optional)
If you prefer a creamier side, use the back of a spoon or a potato masher to gently mash about one-third of the beans against the skillet, creating a mix of whole and mashed beans to thicken the sauce. Do this in the last 2 minutes of cooking.

Finish and season
Remove skillet from heat. Stir in 1 tablespoon lemon juice, 2 tablespoons chopped fresh parsley, 1 teaspoon salt, and 1 teaspoon freshly ground black pepper. Taste and adjust salt, pepper, or lemon as needed.
- 5
Serve
Transfer the beans to a serving bowl. Drizzle with a little extra-virgin olive oil if desired and sprinkle a few more chopped parsley leaves. Serve warm as a side dish.
