Season and simmer
Sprinkle 1 tsp mild taco seasoning over the cooked beef. Add 2 tbsp water, stir to combine, and reduce heat to low. Simmer gently 1–2 minutes until seasoning is well distributed and liquids are slightly reduced.

Add cheese and finish
Stir in 0.5 cup shredded mild cheddar cheese, 1/8 tsp salt, and 1/16 tsp black pepper. Cook 30–60 seconds more, stirring, until the cheese melts and binds the meat to a moist, cheesy consistency. Remove from heat and keep warm.

Warm tortillas
Heat a separate small skillet over low heat or set the oven to 300°F (150°C). If using a skillet, melt 0.5 tsp unsalted butter and warm each 6-inch flour tortilla about 15–20 seconds per side until pliable and lightly warm. If using oven, stack tortillas wrapped in foil and heat 5–7 minutes.

Assemble tacos
Place a warmed tortilla on a plate. Spoon half of the cheesy ground beef (about 1/2 cup) down the center of each tortilla. Top each taco with 2 tbsp shredded lettuce, 1 tbsp diced tomato, 1/2 tbsp sour cream, and 1/2 tsp mild salsa. Fold gently in half and serve.

Serving suggestion
Serve the two tacos on a kid-friendly plate. Let the child add more toppings if desired. For picky eaters, serve components (meat, lettuce, cheese, tomato, sour cream) separately so they can build their own.
