Sweet Potato Fries

Preheat and prepare
Preheat oven to 230°C (450°F). Line two baking sheets with parchment paper or lightly oil them so fries don’t stick.

Cut and dry
Peel the sweet potatoes if desired and cut into even 0.5 cm–1 cm (quarter- to half-inch) sticks. Place cut fries in a large bowl of cold water and soak for 20–30 minutes to remove excess starch, which helps them crisp.

Dry thoroughly
Drain the fries and spread them on clean kitchen towels or paper towels. Pat completely dry — any surface moisture will prevent crisping.

Toss with cornstarch and oil
Return dried fries to a dry large bowl. Sprinkle the cornstarch over the fries and toss so they are lightly and evenly coated. Drizzle with 2 tbs olive oil and toss until every fry is lightly coated.

Season
In a small bowl, mix smoked paprika, chipotle chili powder, ground cumin, garlic powder, sea salt and black pepper. Sprinkle the spice mix over fries and toss until evenly distributed.

Arrange on baking sheets
Spread fries in a single layer on the prepared baking sheets, avoiding overcrowding. For best results place fries in a single layer with space between pieces; use both sheets if needed.

Bake and flip
Bake in the preheated oven for 18 minutes. Remove from oven and use a spatula to flip each fry or rotate trays between racks. Return to oven and bake another 10–12 minutes until edges are browned and crispy. Baking time may vary depending on thickness — total 28–30 minutes is a guideline.

Finish and serve
If you want extra crispness, broil on high for 1–2 minutes while watching closely. Remove fries from oven, sprinkle a small pinch of extra salt if needed, and transfer to a serving dish. Serve immediately with the chipotle dipping sauce.

Make the sauce while fries bake: In a small bowl combine Greek yogurt (or mayonnaise), adobo sauce, lime juice, honey, salt and black pepper. Whisk until smooth and taste — adjust heat by adding more adobo sauce or a small minced chipotle in adobo for more smokiness and spice. Chill briefly if time allows. Serve alongside hot fries.
