Marinade Preparation

Prepare the chilies
Remove the stems and seeds from the dried guajillo and ancho chilies. Soak them in hot water for about 15 minutes until they soften.

Make the marinade
In a blender, combine the softened chilies, garlic cloves, pineapple juice, cumin, oregano, salt, black pepper, white vinegar, and sugar. Blend until smooth.

Marinate the pork
Cut the pork shoulder into large chunks and place it in a bowl. Pour the marinade over the pork, ensuring it's well coated. Cover and refrigerate for at least 4 hours, preferably overnight.

Rest and slice
Once cooked, remove the pork from the heat and let it rest for 10 minutes. Then, slice the pork thinly against the grain.

Warm the tortillas
In a dry skillet over medium heat, warm the corn tortillas for about 30 seconds on each side until pliable.

Assemble the tacos
On each tortilla, add a few slices of the grilled pork, topped with diced pineapple, chopped onion, and cilantro. Squeeze fresh lime juice over the top.

Serve the tacos with lime wedges on the side for extra flavor.
