Method
Marinating the Protein
Prepare the Marinade
In a medium bowl, mix together the olive oil, lime juice, chili powder, cumin, garlic powder, salt, and black pepper.
Marinate the Chicken or Beef
Place the boneless chicken breasts or flank steak in a zip-top bag or shallow dish. Pour the marinade over the meat, ensuring it's well-coated. Marinate in the refrigerator for at least 30 minutes or up to 2 hours for more flavor.
Grilling
Prepare the Grill
Preheat your grill to medium-high heat. If using a grill pan, heat it over medium-high heat and lightly grease it with cooking spray.
Grill the Protein
Remove the meat from the marinade, allowing excess marinade to drip off. Grill the chicken or beef for about 6-7 minutes per side, until fully cooked and internal temperature reaches 165°F (74°C) for chicken or 145°F (63°C) for beef. Remove from the grill and let rest for 5 minutes before slicing.
Cooking the Vegetables
Assemble the Fajitas
Warm the Tortillas
Wrap the tortillas in aluminum foil and place them on the grill for the last few minutes of cooking, or warm them in a microwave for about 30 seconds until soft.
Serve the Fajitas
Slice the grilled chicken or beef into strips. Serve with warm tortillas, sautéed vegetables, sour cream, shredded cheese, salsa, and fresh cilantro. Let everyone assemble their own fajitas.
