    Prepare the Meat

    In a large pot, add the chuck roast, bay leaves, salt, pepper, cumin, oregano, and diced onion. Cover with beef broth and bring to a boil. Reduce heat and simmer for about 2 hours or until the meat is tender.

    Make the Sauce

    While the meat is cooking, remove the stems and seeds from the guajillo and ancho chiles. Soak the chiles in hot water for 15 minutes until softened. Blend the chiles with garlic and a bit of the soaking water until smooth. Set aside.

    Combine Meat and Sauce

    Once the meat is tender, remove it from the pot and shred it. Strain the cooking liquid, reserving the broth. In a blender, combine the shredded meat and the blended chile sauce. Add some of the reserved broth to achieve desired consistency.

    Prepare Tacos

    In a skillet, warm the corn tortillas one at a time. Fill each tortilla with the birria mixture and fold in half. Cook in the skillet until crispy.

    Serve

    Top tacos with diced onions and fresh cilantro. Serve with lime wedges on the side.
