    Cook the Bacon

    In a skillet over medium heat, cook the bacon until crispy. Remove from the skillet and place on paper towels to drain excess fat.

    Prepare the Eggs

    In the same skillet, reduce heat to low and crack the eggs into the skillet. Cook until whites are set but yolks are still runny, about 3-4 minutes.

    Grill the Bread

    Preheat a grill or grill pan. Lightly brush the country loaf slices with olive oil and grill for 2-3 minutes on each side until golden brown.

    Assemble the Salad

    On a large plate, place the heirloom tomatoes, cut into wedges. Top with crispy bacon, pickled red onions, and the fried eggs.

    Serve

    Drizzle blue cheese dressing over the salad and serve with grilled country loaf slices on the side.
