Lobster Bisque Directions

    Prepare the Stock

    In a large pot, melt butter over medium heat. Add lobster shells and sauté for about 5-7 minutes until they turn pink and fragrant.

    Sauté Vegetables

    Add onion, carrot, celery, and garlic to the pot. Cook until the vegetables are softened, about 5 minutes.

    Add Tomato Paste and Wine

    Stir in the tomato paste and cook for 2 minutes. Pour in the white wine and let it simmer for 5 minutes.

    Add Stock

    Add fish stock (or water) to the pot. Bring to a boil, then reduce heat and simmer for 30 minutes.

    Strain the Mixture

    Remove the pot from heat and strain the mixture through a fine mesh sieve, discarding solids. Return the liquid to the pot.

    Add Cream and Seasoning

    Stir in the heavy cream, salt, and black pepper. Bring to a gentle simmer.

    Blend the Soup

    Using an immersion blender, puree the soup until smooth. Adjust seasoning if necessary.

    Add Lobster and Basil

    Stir in the cooked lobster meat and fresh basil. Let it heat through for a few minutes.

    Serve

    Ladle the bisque into bowls, top with a dollop of crème fraîche, and serve with toasted brioche slices.
