    Caramelize the Onions

    In a large pot, melt the butter and olive oil over medium heat. Add the sliced onions and cook, stirring frequently, until they are golden brown and caramelized, about 25-30 minutes.

    Add Liquid and Seasonings

    Pour in the dry white wine and scrape the bottom of the pot to deglaze. Stir in the beef broth or veal demi-glace, thyme, bay leaf, salt, and pepper. Bring the mixture to a simmer.

    Simmer the Soup

    Reduce the heat to low and let the soup simmer for about 30 minutes, allowing the flavors to meld together. Remove the bay leaf before serving.

    Prepare the Bread and Cheese

    While the soup is simmering, preheat your oven to 400°F (200°C). Place the slices of country bread on a baking sheet and toast them in the oven for about 5-7 minutes, until golden brown. Remove from the oven and top each slice with grated Gruyère cheese.

    Melt the Cheese

    Return the bread with cheese to the oven and broil for 2-3 minutes until the cheese is melted and bubbly.

    Ladle the hot onion soup into bowls, place a slice of the cheesy bread on top, and enjoy!
