    Prepare the Basil Meringue

    Preheat your oven to 200°F (95°C). In a mixing bowl, whisk the egg whites until frothy. Gradually add the sugar, continuing to whisk until stiff peaks form. Gently fold in finely chopped basil leaves. Pipe or spoon the meringue onto a baking sheet lined with parchment paper and shape into small nests. Bake for 1.5-2 hours until crisp. Turn off the oven and let them cool inside.

    Prepare the Tomatoes

    Halve the cherry tomatoes and season them with a pinch of salt and a drizzle of olive oil. Let them sit for about 10 minutes to enhance their flavor.

    Assemble the Dish

    On each crostini, place a generous spoonful of burrata cheese. Top with the seasoned cherry tomatoes and a piece of basil meringue. Drizzle with balsamic glaze and sprinkle with crushed pink peppercorns.
