Preparation Steps

  1. 1

    Prepare the Ham

Preheat your oven to 325°F (163°C). Place the bone-in smoked ham on a large roasting pan, cut side down. Score the surface of the ham in a diamond pattern, making shallow cuts about 1 inch apart.

  2. 2

    Make the Glaze

In a medium saucepan, combine brown sugar, honey, Dijon mustard, apple cider vinegar, ground cloves, and ground cinnamon. Cook over medium heat, stirring frequently until the sugar has dissolved and the mixture is smooth.

  3. 3

    Apply the Glaze

Brush half of the glaze over the scored surface of the ham, ensuring it gets into the cuts. Reserve the other half for later.

  4. 4

    Roast the Ham

Cover the ham loosely with aluminum foil and place it in the preheated oven. Roast for about 1.5 to 2 hours, basting with reserved glaze every 30 minutes. Remove the foil during the last 30 minutes to allow the glaze to caramelize.

  5. 5

    Finish and Serve

Once the internal temperature of the ham reaches 140°F (60°C), remove it from the oven. Let it rest for at least 15 minutes before slicing. Garnish with fresh rosemary sprigs before serving.
