Prepare the Chia Mixture

In a medium bowl, combine the chia seeds, oat milk, and vanilla extract. Stir well to ensure the chia seeds are evenly dispersed in the liquid to prevent clumping.

Let It Sit

Allow the mixture to sit for about 5-10 minutes. This initial resting period allows the chia seeds to absorb some of the liquid and begin to swell.

Stir Again

After the initial resting period, stir the mixture again to make sure there are no clumps of chia seeds. You want a smooth, pudding-like consistency.

Chill the Pudding

Cover the bowl with plastic wrap or transfer the mixture to individual serving jars. Refrigerate for at least 2 hours or overnight. This allows the chia seeds to fully absorb the liquid and thicken the pudding.

Add Coconut and Berries

Once the pudding is set, remove it from the fridge. Stir in the coconut flakes and top with mixed berries. You can also drizzle some maple syrup or honey on top if desired.

Spoon the chia pudding into bowls or jars and enjoy your healthy chia pudding as a snack, breakfast, or dessert!
