Lamb Preparation

    Prepare the Lamb

    Preheat your oven to 180°C (350°F). Season the saddle of lamb with salt and black pepper. In a large skillet, heat olive oil over medium-high heat. Sear the lamb on all sides until browned, about 3-4 minutes per side.

    Cook the Lamb

    Transfer the seared lamb to a roasting pan and place it in the preheated oven. Roast for about 25-30 minutes or until the internal temperature reaches 55°C (130°F) for medium-rare. Remove from the oven and let it rest for 10 minutes before slicing.

    Cook the Lamb Bacon

    In the same skillet used for searing the lamb, cook the lamb bacon until crispy. Remove and drain on paper towels.

Cucumber and Melon Salad

    Prepare the Salad

    While the lamb is cooking, peel and dice the cucumber and melon into bite-sized pieces. In a bowl, combine the cucumber, melon, and cured olives. Add fresh mint leaves and lemon juice. Toss gently to combine.

Green Harissa

    Make the Green Harissa

    In a food processor, combine cilantro, parsley, green chili peppers, garlic, cumin, and olive oil. Blend until smooth. Adjust seasoning with salt if necessary.
