Brownie Preparation

Make the Brownies
Preheat the oven to 180°C (350°F). Melt the butter in a saucepan over low heat. Remove from heat and stir in granulated sugar and brown sugar until well combined. Add the eggs one at a time, mixing well after each addition. Stir in the flour, cocoa powder, and salt until just combined. Pour the batter into a greased baking dish and bake for 20-25 minutes. Allow to cool before cutting into squares.

Prepare the Mousse
Chop the milk chocolate and place in a heatproof bowl. Heat half of the heavy cream until just simmering, then pour over the chocolate and let sit for a few minutes before stirring until smooth. In a separate bowl, whisk the eggs and sugar until pale and fluffy. Gently fold in the chocolate mixture and the remaining whipped cream. Add vanilla extract and mix until combined.

Assemble the Dessert
Cut the cooled brownies into squares and place one in the bottom of each serving dish. Spoon the chocolate mousse over the brownie layer. Chill in the refrigerator for at least 2 hours. Before serving, garnish with chocolate pearls.
