Assemble and Bake the Pie
Stir in the pecan halves into the filling mixture and pour into the pre-baked pie crust. Bake for 50-60 minutes, or until the filling is set and the top is golden. Let cool before serving.
For the Bourbon Caramel Ice Cream

Make the Ice Cream Base
In a saucepan, combine the heavy cream, whole milk, and sugar. Heat over medium heat until the sugar dissolves. In a bowl, whisk the egg yolks, then gradually add a small amount of the warm mixture to temper the yolks. Pour the tempered yolks back into the saucepan and cook, stirring constantly, until the mixture thickens enough to coat the back of a spoon.

Chill the Base
Remove from heat and strain the mixture into a bowl. Stir in the vanilla extract and bourbon. Cover and refrigerate until completely chilled.

Churn with Liquid Nitrogen
Once chilled, pour the mixture into a mixing bowl. Using liquid nitrogen, pour it slowly into the bowl while stirring continuously until the ice cream reaches a soft-serve consistency. Serve immediately or transfer to a container and freeze until firm.
