Cold Smoke the Pork
Season the pork secreto with smoked sea salt and black pepper. Place it in a cold smoker for 2 hours to infuse the smoke flavor.

Prepare the Pickled Onions
In a bowl, combine the sliced red onion, white wine vinegar, sugar, and salt. Mix well and let sit for at least 30 minutes.
Warm Potato Salad

Cook the Potatoes
Boil the baby potatoes in salted water until tender, about 15-20 minutes. Drain and let cool slightly.

In a large bowl, combine the warm potatoes with olive oil, Dijon mustard, white wine vinegar, parsley, salt, and black pepper. Toss gently to combine.
Mustard Ale Jus

Make the Jus
In a saucepan over medium heat, combine ale, Dijon mustard, and beef broth. Bring to a simmer and reduce for about 10 minutes. Whisk in butter and season with salt and pepper to taste.
