Prepare the Filling

Caramelize the Onions
In a large skillet, heat olive oil over medium heat. Add the sliced onions and salt, and cook for about 20-25 minutes, stirring frequently, until the onions are golden brown and caramelized.

Add Garlic and Rosemary
Stir in the roasted garlic and chopped rosemary, and season with black pepper. Cook for an additional 5 minutes, then remove from heat and let cool.
Assemble the Brie en Croute

Preheat the Oven
Preheat your oven to 400°F (200°C).

Wrap the Brie
Roll out the puff pastry on a floured surface. Place the Brie cheese in the center, and spread the caramelized onion mixture on top of the cheese. Fold the pastry over the cheese, sealing the edges well.

Bake
Transfer the wrapped Brie to a baking sheet lined with parchment paper. Brush the pastry with a little olive oil and bake for 20-25 minutes or until golden brown.

Once the Brie en Croute is golden brown, remove it from the oven and let it cool for a few minutes. Serve warm with the grilled bread.
