Method
Mango Rasmalai Poached Cheese Balls (Rasmalai Base)
Make chenna (fresh curds)
Bring 1.5 L whole milk to a gentle boil in a heavy-bottomed pot over medium heat, stirring occasionally to prevent scorching. As soon as it reaches a rolling simmer, reduce heat to low and add the lemon juice gradually while stirring gently; the milk will begin to curdle. Turn off the heat when curds separate clearly from the whey (white liquid). Let sit 5 minutes.
Line a fine-mesh sieve with a double layer of cheesecloth and place over a bowl. Pour the curdled milk through the cloth to strain; reserve the whey for another use or discard. Rinse the curds briefly under cold water to remove lemony tang and stop cooking. Gather the cloth and squeeze gently to remove excess liquid, then hang or rest for 20–30 minutes to drain further; the curd should be moist but not wet.
Transfer the drained curds to a clean bowl. Knead the curds with the heel of your hand for 4–5 minutes until smooth and cohesive (the dough should hold together but be soft). Divide into 6 equal portions and roll each into a smooth, slightly flattened ball. Place on a tray dusted with a little dry semolina or leftover milk powder to prevent sticking.
Prepare poaching syrup and poach
In a wide shallow pan combine 0.75 cup sugar, 0.5 cup water and 6 lightly crushed cardamom pods. Bring to a simmer and dissolve sugar. Gently add the cheese balls, cover and simmer on low for 8–10 minutes, turning once halfway so they poach evenly; they will expand slightly. Remove from syrup and let cool briefly while you prepare the saffron ras. Reserve 1/2 cup of the poaching syrup to add to the saffron milk for flavor if desired.
Lightly sprinkle 1/4 tsp Vancouver Island sea salt over the finished balls to balance sweetness. Keep poached balls warm in a shallow amount of the reserved syrup until assembly.
Saffron-Infused Ras (Sweet Milk)
Bloom 1 tsp saffron threads by crushing them lightly and pouring 2 tbsp hot milk over them; set aside 10–15 minutes until deeply colored.
In a heavy saucepan combine 1 L whole milk and 1/2 cup heavy cream. Bring to a gentle simmer over medium-low heat, stirring frequently to prevent skin and burning. When the milk is reduced slightly (about 10–12 minutes), add 1/4 cup granulated sugar, 1/4 tsp freshly ground cardamom and 1/8 tsp Vancouver Island sea salt. Stir until sugar dissolves.
Stir in the saffron-infused milk and continue to simmer on low for another 6–8 minutes until the mixture is slightly thickened and aromatic. Taste and adjust sweetness. Remove from heat and let cool to warm; chill if you prefer a colder dessert base (chilling will thicken slightly).
Fresh Mango Gel & Garnish
Place 1 cup diced ripe mango, 1/2 cup mango purée, 1 tbsp caster sugar and 1/2 tsp lemon juice in a small saucepan. Stir over medium-low heat until sugar dissolves and mixture warms through (2–3 minutes).
Meanwhile, bloom 1 tsp gelatin in 1 tbsp cold water for 5 minutes. Add the bloomed gelatin to the warm mango mixture and stir until fully dissolved. Remove from heat and pass through a fine sieve for a smooth gel. Allow to cool slightly until just beginning to set but still pourable (about 10–15 minutes).
Reserve a spoonful of diced mango for garnish. Keep the gel warm slightly or at room temperature so it can be spooned over the cheese balls during plating.
Saffron White Chocolate Paint & Clarified Saffron Milk
Bloom 1/2 tsp saffron threads for the paint in 1 tbsp hot milk; set aside 10 minutes.
To make clarified saffron milk: place 2 cups whole milk in a saucepan and bring to a gentle simmer. Add 1/2 tsp saffron threads and simmer 4–5 minutes. Reduce heat and allow milk to sit 5 minutes for saffron to infuse. Pour the milk into a clean jar and refrigerate until the cream solidifies slightly on top (or use a clarifying method: cool then skim off cream). Carefully spoon off the top cream layer — reserve this clarified saffron milk (about 1/4 cup) for finishing. Alternatively, strain the infused milk through a very fine cloth to remove solids and use the yellow saffron milk (this will be less 'clarified' but still flavorful).
Make saffron white chocolate paint: place 100 g finely chopped white chocolate and 2 tbsp single cream in a small heatproof bowl. Warm gently over a bain-marie or very low heat, stirring until smooth. Stir in the bloomed saffron (and 1/4 cup clarified saffron milk if using) to loosen to a brushable consistency. Keep warm and stir occasionally to maintain fluidity. If too thick, add a teaspoon of warm clarified milk at a time.
Finishing & Assembly
Warm the poached cheese balls slightly in a little reserved syrup so they are pliable but not hot (microwave 10–12 seconds or warm gently on stovetop). Place one cheese ball in the center of each serving plate (makes 6).
Ladle about 3–4 tbsp of the saffron-infused ras (sweet milk) around each ball so the base is partially submerged. Spoon 1–2 tbsp of the mango gel onto each cheeseball and around the plate for concentrated mango flavor and texture contrast. Garnish each ball with a few small diced mango pieces and a thin mango slice fan as decorative accent.
Using a small pastry or food-safe brush, paint an artistic streak or dot of the warm saffron white chocolate paint onto each cheese ball and plate. Drizzle with a teaspoon of the clarified saffron milk and, if desired, brush a tiny amount of gin (lightly dabbed) around the plate edges or mist a few drops over the clarified milk for aroma — do not soak, keep alcohol subtle.
Finish each plate with a sprinkle of very finely chopped pistachios, a mint leaf, and a tiny pinch (a crack) of Vancouver Island sea salt to brighten flavors. Serve immediately. Leftovers: keep ras and balls refrigerated in airtight container up to 24 hours; add paint and fresh mango at serving.
