Margarita Base

Method

House Sauce (make first, yields ~6 servings)

    Warm and combine

    In a small heatproof container combine 1 cup agave nectar and 1/4 cup hot (not boiling) water. Stir until smooth and slightly thinned. This creates a pourable agave mix.

    Add 1 teaspoon fresh lime zest and 1 tablespoon fresh lime juice to the agave mix. Stir to incorporate. Let cool to room temperature before using. Store refrigerated up to 2 weeks.

Glass Preparation

    Rub a lime wedge around the rim of a chilled rocks or margarita glass. Pour the coarse salt or sugar onto a small plate and dip the rim into it to coat. Set glass aside.

Build & Shake Margarita

    Fill a cocktail shaker halfway with ice (about 1 cup).

    Add 2 oz gold tequila, 1 oz Triple Sec, 1 oz fresh lime juice and 0.5 oz of the prepared house agave mix (or 0.5 oz agave nectar if not using the mix) into the shaker.

    If adding a fruit flavor (+$0.50), add 0.5 oz of the chosen fruit purée to the shaker. Only one flavor suggested per drink; for multiple flavors, increase purée proportionally and adjust sweetness to taste.

    Secure the shaker lid and shake vigorously for 10–15 seconds until the shaker feels cold and the mixture is well combined (the exterior will frost slightly).

Serve

    Fill the prepared glass with fresh ice (about 1 cup). Double strain the margarita into the glass over the ice to remove small ice shards and pulp (use a fine mesh strainer if using fruit purée).

    Garnish with a lime wedge on the rim. If fruit purée was used, optionally float a thin slice of the corresponding fruit on top or add a small skewer for visual appeal.

    Serve immediately with a straw or cocktail pick.
