Ceviche

    Prep shrimp

    Rinse the shrimp and pat dry. If using medium shrimp, cut into 1/2-inch pieces. If larger, chop into bite-size (about 1/2 to 3/4 inch).

    Cure in lime juice

    Place the chopped shrimp in a nonreactive bowl (glass or stainless steel). Pour the fresh lime juice over the shrimp, ensuring all pieces are submerged. Cover and refrigerate 20–30 minutes, tossing once or twice, until the shrimp turn opaque and firm (the shrimp should feel 'cooked' through). If using very small shrimp, 15–20 minutes may be sufficient.

    Drain and combine

    Once the shrimp are opaque, drain about half of the lime juice from the bowl (leave a little for flavor). Add the diced tomatoes, diced red onion, chopped cilantro, minced jalapeño, salt, pepper, and sugar (if using). Gently fold to combine. Taste and adjust salt or jalapeño for heat. Refrigerate until ready to assemble (up to 1 hour).

Tostada shells & frying

    Heat oil

    In a deep, heavy skillet or pot, pour enough oil to come about 1/2 inch deep (approximately 3–4 cups depending on pan). Heat over medium-high until the oil reaches 350°F (175°C) or until a small piece of tortilla sizzles immediately.

    Fry tortillas

    Working in batches, using tongs or a spider strainer, hold a tortilla in the hot oil and fry 30–45 seconds per side until crisp and golden, or lay tortillas flat and fry each side about 45–60 seconds, flipping once. For extra crispness and a true tostada shape, fry until the edges slightly curl. Remove to a paper-towel-lined rack and immediately sprinkle a little fine salt on each warm shell.

    Cool

    Let the shells cool and crisp fully (2–3 minutes) before assembling so they don't soften from the ceviche juices.

Garnish & serve

    Assemble tostadas

    Spoon 2–3 tablespoons (or more to preference) of the shrimp ceviche onto each tostada shell, spreading into an even layer but not overloading so the shell stays crisp.

    Add avocado and finish

    Top each ceviche-topped shell with 3–4 slices of ripe avocado. Add a small drizzle of hot sauce if desired and finish with a squeeze of fresh lime. Serve immediately to maintain shell crispness.

    Storage note

    Ceviche can be kept refrigerated up to 24 hours (texture degrades after that). Fried tostada shells are best eaten the same day; store separately in an airtight container at room temperature to preserve crispness.
