    Prepare the spinach

    Heat a large skillet over medium heat. Add olive oil and butter. When the butter melts and foams, add the chopped spinach in batches if needed so it wilts evenly. Sauté for 3–4 minutes until wilted and bright green. Remove from heat and transfer spinach to a fine-mesh sieve or colander. Press or squeeze with the back of a spoon to remove as much liquid as possible (important to avoid a watery dip). Let cool slightly, then finely chop any large pieces if necessary.

    Mix base cheeses

    In a medium mixing bowl, beat the softened cream cheese with a rubber spatula or hand mixer until smooth. Stir in the sour cream and mayonnaise until fully incorporated and creamy.

    Combine flavorings

    Add the grated Parmesan, shredded mozzarella, minced garlic, and chopped onion (or scallions) to the cheese mixture. Stir in the lemon juice, salt, black pepper, and red pepper flakes (if using).

    Fold in spinach

    Add the cooled, well-drained chopped spinach to the cheese mixture and fold until evenly distributed. Taste and adjust seasoning with additional salt, pepper, or lemon juice as desired.

    Bake (optional) or chill

    For a warm baked spinach dip: preheat oven to 350°F (175°C). Transfer the dip to an oven-safe shallow baking dish (about 1.5–2 quart). Smooth the top, sprinkle the extra grated Parmesan over the surface, and bake for 20–25 minutes until bubbly and lightly golden on top. For a chilled dip: cover and refrigerate at least 1 hour to allow flavors to meld; stir before serving.

    If baked, let the dip rest 5 minutes before serving so it firms slightly. If chilled, bring to room temperature for 10–15 minutes before serving for best texture and flavor.

For Sautéing

    Use the olive oil and butter together in the skillet as directed in 'Prepare the spinach' to prevent sticking and add flavor. Scrape any browned bits into the spinach when transferring to the sieve.

Optional Garnish & Serve
